Dolly’s Pimento Cheese

 

Ingredients:.

  1. 1 pkg shredded cheese (sharp is best)
  2. 1. 4-oz jar pimentos
  3. ¾ - 1 C mayonnaise

 

Instructions:

  1. Put pimentos in a mini-chopper and chop very fine.
  2. Mix all together.

Rum Slush

Ingredients:

1.      2 (12 oz) cans lemonade concentrate (pink, yellow or limeade)

2.      2 ltr bottle 7UP

3.      1 fifth rum

 

Instructions:

1.      Mix all together

2.      Put in freezer for at least 24 hours.

3.      Stir once or twice while freezing.

Cowboy Caviar

Ingredients for marinade:

1.      1 C salad oil

2.      ½ t salt

3.      ½ C cider vinegar

4.      ½ C sugar

5.      ¼ t pepper

 

Ingredients for dish:

1.      1 can pinto beans (drained)

2.      1 can black eyed peas (drained)

3.      1 can white shoepeg corn (drained)

4.      1 C chopped bell pepper (any color)

5.      1 C chopped celery

6.      ½ chopped onion

7.      1 small jar chopped pimento

8.      2 or 3 jalapeno peppers (seeded and chopped)

 

Instructions:

1.      Pour cooled marinade over mixture

2.      Refrigerate overnight

3.      DRAIN WELL

4.      Serve with Frito “Scoops”

5.      Enjoy!
